Cooking for a cause

“We see you and we care.”
In refugee camps, and on the streets, in Serbia, and in Bosnia and Herzegovina — over 400,000 meals served, and counting. Every meal prepared by volunteers. All of us are here because we share a common goal: to care for refugees and other displaced people in the Balkans.
This book is the result of a year and a half of cooking for refugees in the Balkans. In it, you will find a mix of vegan recipes, volunteer stories aimed to inspire, and facts about the European refugee crisis.
The recipes in the book have all been developed for our mission to feed people in need. We have used them to bring kindness, warmth, and a taste of home for people who do not often receive those things. We believe that there is incredible social and cultural importance inherent to food, and we aim to honor that in the food we serve. By no means do we claim that our recipes are the exact same as they would be in the countries of their origin. What we strive for is a reflection of their essence.
Because we respect religious and/or cultural limitations to one’s diet the recipes in this book are entirely vegan-friendly. Inspired by mostly Middle Eastern and Asian cuisine, and with a lot of input from the people we serve, we are proud to introduce you to these dishes. For a more rounded picture we have also decided to include volunteer recipes: meals that volunteers would cook amongst themselves and for each other as part of our daily shared “family dinners”.
Being able to share food with family and friends is something that’s often taken for granted and unfortunately not something everyone gets to enjoy. We hope this book inspires our readers to share the joy of cooking and eating with the people they care for.
